We collaborated on two new beers with a very special restaurant in the Faroe Islands called Koks. They focus their culinary efforts on exploring ancient practices of drying, fermenting, salting and smoking and transform their methods into modern delicacies. We played off this idea when creating Koks Ræst Kød and Ræst Fisk, created to complement meat and fish dishes that are typically dried and matured.
